I think the stats do give an indication about certain things. They shouldn't be viewed in isolation, that's all.
If a defender has about 90% of tackles won it is an indicator that he is very tough to beat.
Now it may also be that his positional sense is so bad that he doesn't get near enough to tackle a player and is watching players scoring goals from 10 yards away (see Greg Halford's recent games for Sunderland).
If a defender has only made 4 tackles in 5 games then the stats are crap.
If he has made 300 tackles in 5 games his performances are likely to have been good.
Now take a goalkeeper...
Hahnemann has let in a few in the last 2 games but he has probably saved a whole lot more. His percentage of stopping shots, catching crosses, etc. is probably very high.
Perhaps if the whole team defended better, he'd have less to save. If he then saved 1 out of 2 shots on his goal during a game he would only have a 50% rating but we may have won that game 2-1.
However, we may lose a game 3-0 and Hahnemann saved a further 7 shots, which would give him a rating of 70%
Does that make him a better goalkeeper than one with a rating of 50%??
